Za’atar and Honey Halloumi
Serves 2
You only need a handful of ingredients to create this sweet and salty halloumi, marinated in za’atar and coated in an irresistible honey-lemon mixture. It’s almost too simple for a recipe but I’ve written my method below.
225g of Halloumi
1 Tsp of Za’atar
2 Tbsp of Honey
Small Handful of Fresh Thyme
1/2 Lemon
Pinch of Chilli Flakes (optional)
Olive Oil
Salt
Pepper
Slice the halloumi into medium-thick rectangles. Place the halloumi into a bowl, drizzle with olive oil and sprinkle with za’atar. Coat the halloumi in the mixture and marinate for 10 minutes.
Get a frying pan on a medium high heat. Add the halloumi and fry for about 4 minutes on each side until golden brown.
While the halloumi cooks, add 2 tbsp of olive oil, 1 tbsp of lemon juice, the honey, thyme, a pinch of salt and a good grind of pepper. Mix well to create a thick glaze.
Once the halloumi is golden on both sides, take the pan off the heat and drizzle the honey glaze over the top. It will bubble away for a minute or two, slightly caramelising the halloumi.
Serve the halloumi with any remaining glaze, another squeeze of lemon and some chilli flakes if you like the heat.
