White Bean Salad
Serves 1
A super fresh salad made with simple ingredients and a whole lot of flavour.
400g Tin of White Beans
5 Cherry Tomatoes
5 Black Olives, Preferably Gaeta or Kalamata
1 Small Garlic Clove
2 Tsp of White Wine Vinegar
3 Parmesan Shavings
2 Sprigs of Thyme, Basil or Parsley
Pinch of Chilli Flakes
Olive Oil
Salt
Pepper
Drain your beans, making sure to give them a good rinse before adding them to a large bowl. Cut the tomatoes into quarters, the olives into halves and finely chop your garlic. Add them all into the bowl with the beans. Add 2 tbsp of olive oil, the vinegar, a good pinch of salt and pepper and the chilli flakes. Give the salad a gentle stir for a minute to combine the flavours. Spoon the salad onto a serving plate and garnish with the parmesan and herbs. Add an extra grind of black pepper and a drizzle of olive.
