1 1/2 Tbsp Light Soy Sauce
2 Tbsp of Rice Vinegar
2 Tbsp of Sugar
1/4 Tsp of Salt
1 Tbsp Sesame Oil
1 Garlic Clove
1 Tsp of Chinese Chilli Oil
1 Spring Onion (optional)
1 Tsp of Sesame Seeds (optional)
Whisk the soy sauce, rice vinegar, sugar, salt, sesame oil and chilli oil together until the sugar dissolves and the mixture thickens. Finely chop your garlic and spring onion and mix it into the sauce.
Smack the cucumber using the flat side of a wide knife or a rolling pin until the cucumber breaks down. Cut the cucumber into pieces.
Add the cucumber to the dressing along with the sesame seeds (optional) and mix everything together. Serve immediately or keep in the fridge for a few hours before serving.
