Sea Bass with Mediterranean Vegetables

Serves 2

Despite spending most of my week in the kitchen, I don’t have as much time or energy to dedicate to meal prep as I once did. I have a handful of effortless dishes that I rely on when I need something tasty and nourishing and this is one of my favourites. There’s no need to miss out on flavour when you’re in a rush and this dish really hits the spot.

2 Sea Bass Fillets
1 Red Pepper
1 Small Red Onion
250g of Cherry Tomatoes
3 Cloves of Garlic
1 Small Ciabatta
1/2 Lemon
1 Bay Leaf (Optional)
A Few Sprigs of Parsley (Optional)
Olive Oil
Salt
Pepper

Thinly slice the pepper, onion, tomatoes and garlic. Get a pan on medium heat and sweat the vegetables in a couple tbsps of olive oil with the garlic, bay leaf (optional) and season with salt and pepper. Add a splash of water, cover with a lid and leave to simmer until the vegetables are soft, about 10 minutes.

Get a pan on medium-high heat. Drizzle the sea bass with olive oil on both sides and season with salt and pepper. Fry the fish skin-side down in the pan for 2-3 minutes, or until the skin is crisp and golden. Flip the fillets over, and cook for an additional minute.

Transfer the vegetables and fish onto a plate and add a squeeze of lemon over the top. Garnish with parsley (optional) and serve with toasted ciabatta.
