Grilled Peach and Burrata Salad
Serves 2
The most divine summer salad made in 10 minutes. Sweet juicy peaches paired with creamy burrata, fresh lettuce leaves, fragrant basil and crunchy breadcrumbs. Heavenly as a quick and easy lunch or as an accompaniment to barbecues.
2 Peaches
1 Large Ball of Burrata
1/2 Small Red Onion
50g of Lamb’s Lettuce
2 Tbsp of Panko Breadcrumbs
Pinch of Garlic Granules
Pinch of Chilli Flakes
2 Sprigs of Basil
1/2 a Lemon
Olive Oil
Salt
Pepper
Get a griddle pan on a medium heat. Cut the peaches in half and remove the stones. Brush the peaches with olive oil and season with a pinch of salt and pepper. Grill the peaches on each side for 5 minutes.
Meanwhile, prepare the rest of the salad. Add your lamb’s lettuce onto a serving plate. Finely slice your red onion and scatter it over the lettuce. Place your burrata in the centre. Add your peaches once they’re ready and tear the basil over the top.
In the same pan used to grill your peaches, add the breadcrumbs, garlic granules and chilli flakes. Toast on a medium heat for a minute or two until golden and scatter over your salad. Finish with a good drizzle of olive oil, the juice of your lemon and a final pinch of salt and pepper.
