Greens and Eggs
Serves 2
You can substitute the greens and herbs with whatever you have in the house, it’ll be tasty every time.
1 Small Onion
2 Cloves of Garlic
150g of Green Beans
150g of Peas
2 Knobs of Butter
2-4 Eggs (Depends how hungry you are!)
1/2 Tsp of Dried Thyme
Squeeze of Lemon
Pinch of Chilli Flakes
2 Sprigs of Fresh Mint
Olive Oil
Salt
Pepper
Heat a splash of olive oil in a pan on medium heat. Thinly slice the onion and add it to the pan with a pinch of salt, cook until soft and translucent. Slice the garlic and add it to the pan with the thyme. Sauté for a minute before tipping in your greens. Add the butter, a good squeeze of lemon, a pinch of salt and pepper and stir. Cover until the greens are cooked through.
Crack the eggs on top of the greens, cover, and cook for 4-5 minutes until the eggs are done to your liking. Finely chop the mint and scatter it over the top with your chilli flakes, a pinch of black pepper and a drizzle of olive oil.
