Asian Noodle Salad

Ad | This week I’ve partnered with @greatbritishapples to help you add an apple a day to your diet. Did you know, 3pm is the time when most people crave an energy-boosting snack? I’ve been taking a British apple on my daily walk for a natural source of hydration to keep me feeling refreshed in the warmer weather. Apples are packed with vitamins, minerals and fibre so they’re the ideal snack for that mid-afternoon slump. I’m really passionate about supporting locally grown produce so I created a light and refreshing #AppleOClock recipe for you all to try!
Asian Noodle Salad / Serves 2
300g of Straight to Wok Fine Noodles
50g of Purple Cabbage
1 Medium Carrot
1 British Apple
3 Spring Onions
1/2 a Red Chilli
3 Sprigs of Mint
3 Sprigs of Coriander
1 Tbsp of Soy Sauce
1 Tsp of Honey
1 Tsp of Sesame Oil
1/2 a Lime
Put the noodles in a heatproof bowl and cover with boiling water. Leave to soak for 3 minutes, drain well and refresh with cold water. Set aside for later.
Thinly shred the cabbage, grate the carrot and julienne the apple. Slice the spring onion and chilli. Roughly chop the mint and coriander.
Place the noodles, vegetables, fruit and herbs into a large bowl and toss together. Add the soy sauce, honey, sesame oil and lime juice to a bowl. Mix well and pour over your salad. Toss to combine and divide between bowls. Enjoy!
