Grilled Apricot and Mozzarella Salad

Serves 2

A light and refreshing salad that works beautifully as a main or side dish and can be put together in minutes. If you can, use the best quality ingredients you can find as it will make all the difference.

4 Ripe Apricots
5 Radishes
240g Mozzarella
1 Little Gem Lettuce
1 Tbsp Rapeseed Oil
2 Tsp Balsamic Vinegar
Olive Oil
Salt
Pepper

Prepare your grill or heat a griddle pan over high heat. Halve the apricots, remove the stones and brush with rapeseed oil.

Grill the apricots, flat side down, until marked and beginning to soften, about 1 minute. Flip and cook for another 30 seconds-1 minute until the skin is marked and softened. Remove from the grill or griddle pan and set aside.

Halve your radishes and tear your mozzarella. Assemble the salad starting with the little gem leaves, then apricots, radishes and mozzarella. Drizzle with olive oil and balsamic vinegar. Season well with salt and pepper and enjoy.
